Pipework is run behind removable skirting.  Looks good and is relatively easy to gain access.

You can also run a conduit under the gunnels in fact there's all sorts of ways to surface mount wiring and you have the luxury of doing it this way if you are fitting out yourself.  Builders use first fix as it's easier and cheaper and they won't be maintaining the boat.  It's the same with houses, it's a lot quicker and cheaper to stick the pipes and the wiring behind walls and under floors but when the time comes to rewire or sort out a plumbing problem or add new appliances that's when the fun starts.
