Warming chickpea stew for when the next shop is too far away

I made this recipe up after a long day of cruising. It was raining, the next pub or shop was too far and I didn't have many fresh ingredients at hand. Now I love this recipe and make variations of it all the time. After a while I realised it's "accidentally vegan", too.

 

Olive oil

1 onion, chopped

garlic, chopped

ginger, finely chopped

3 medium potatoes, diced

1 tin of chickpeas, drained

1 tin of butterbeans or other beans, drained

1 tin of tomatoes

Optional: 2 tablespoons of red lentils (dried)

Optional: half a tin of coconut milk

 

It's really easy:

Fry the onion, garlic and ginger in a bit of olive oil

Add the potatoes, cook for 5 minutes (add a bit of water if needed)

Add everything else and cook for 15 minutes.

Done!

I'd just like to say a big thank you for posting this recipe. I knocked it up this evening for supper (including all your optional extra ingrediments) and it was absolutely DELICIOUS.

 

SO much so that although I made a big saucepanful expecting two or three meals out of it, I've scoffed the whole lot this evening. Impossible to stop eating it!

 

Must go out and walk it off now :D

The recipe doesn't specify tin size but, assuming all tins being equal, I suspect we're talking average size tins of about 400g (or ml). You can find coconut milk in tiny 165ml tins - the ones I buy are 'full moon' brand. That'd solve your problem, wouldn't it?

Just eaten a lentil and coconut curry (sort of a dhal) very similar ingredients, onion, red lentils, ground cumin, ground coriander, turmeric, Garam  masala garlic, fresh ginger, tin of tomatoes, tin of coconut milk veg stock or water, a chilli and chopped coriander.

Eaten with naan bread, scrummy.
