Naughty Cal
Add two eggs, a small tub of reduced fat soft cheese, chopped spring onions and smoked salmon trimmings to a large bowl. Mix well and season with pepper. Portion into a muffin tray and bake at 200 degrees for 30 minutes. Works with lots of fillings. A breakfast alternative is smoked bacon and onion served with hash browns and grilled tomatoes.
Dyertribe
That looks good! 'Im Indoors is trying a low carb diet (except where alcohol is involved, don't go there). Now, can we use smoked bacon and salmon without spontaneously combusting?
Naughty Cal
You only need a tiny bit of bacon or salmon. A little goes a long way in this recipe.

BlueStringPudding
I make something similar to this for hippy dippy breakfasts, made with eggs, bacon, finely chopped greens and quinoa. Filling and really tasty

Ally
Been making these for ages. Also make a large version, to eat warm one dinner, then cold through the week for breakfast or lunch. As you say, all sorts can go into them.

Ally
Not at all John! Eat them hot, made with egg, bacon, perhaps some cheese in there, it's a hand held English breakfast on the go. A batch made before cruising in the morning is perfect for an on the move breakfast!
